Hello Hyunsuh, I am so pleased that you have been investigating Chicory – such a lovely plant and as you say, so useful. The inulin is really an important part of the roots. This is a prebiotic for our gut flora – they love it so then can keep us more healthy. I tend to stick to the flowers and leaves though, as I rarely have the chance to dig up a root. I like the flowers as a trail nibble at this time of year. Just a little bit bitter and I am sure that colour does us a lot of good!
