I do not have a scale at home so I can’t precisely weigh how many vegetables I am using, but I for sure know it’s a lot. I notice that on our ever growing compost. Even if we try to waste the smallest amount possible of the vegetable, it still fills up quickly.
Thinking about foraging as much as I need for my usual consumption of a day, it feels unimaginable. Not only because I will probably not find enough, but also because the plants that I do find are precious. If I am lucky, I might find big patches of some plants to be able to comfortably harvest for a whole salad.
