Hello Lynn and Esther 🙂
Interesting links and a chance to reflect on these current “hot topics!
“I have tested Organic Coconut Nectar and Be Sweet Vegan Honey.

The coconut nectar is harvest from the stem of the blossom of the coconut palm. It’s high in zinc, iron, calcium, potassium and inulin, as well as antioxidants.
Be Sweet is raw cane sugar instead of coconut palm sugar based.
The coconut nectar is delicious and the tastiest and more environmental friendly honey replacement that I know. I think it was a little difficult to infuse due to its thickness but the final results are always delicious.
The other honey replacement is very liquidy and although good tasting I don’t think it produces great final products. I prefer to work with agave or maple syrup.
There’s a nice link that compares (has a nutritional table) honey with real maple syrup

I never tried to eat vegetable glycerin: that’s a great idea!
Would love to do a comparison trial meet up: challenge accepted! xD
