2.Find a herbal remedy recipe, online or in a book, which uses herb roots and think of how you could substitute leaves from the same plant.
How would you need to change the recipe? Is it possible to use the leaves of the plant (are they safe)?
I always made Comfrey ointments with the roots, but you could use the leaves of the plant as well, they are safe!
Also, it seems you can use the green stems of garlic as well!
Blackberry roots are used medicinally, and here you can also use the leaves.
