I think your salads will crop for you, they may “bolt” when not in ideal growing conditions, so they decide it’s seed making time early, giving a woody central flower stem – you can either embrace that and welcome a seed crop (to grow more or eat/ getting mustard seeds etc) or nip out the growing flower stem to encourage the plants to focus on leaves.

Ideas for a streetside moon garden – wonderful! How about a heading scented Brugmansia? (Angel’s Trumpets – it’s toxic but magical and nothing in it that people would eat really) also Honesty looks great, shimmers in moonlight. And Night scented stocks. Snapdragons – they are edible/ useful and will help defend the property! I’ll keep thinking and add more. White flowers look great longest at night and catch the moonlight.. White Stockroos/Hollyhocks too..
