Hi Claire,
Lovely to hear what you have been doing with roses. What a tasty and international tea mix you have going on! I have not tried shell ginger or pea flower with rose but sounds delicious. The leaves are astringent, nice as part of a tea where some boundaries and tightening up are needed.
